A Culinary Heritage Reimagined
Chef Chen Kentaro’s passion for Szechwan cuisine stems from a rich family legacy. His grandfather, Chen Kenmin, founded Shisen Hanten in Tokyo in 1958, pioneering Chūka Szechwan Ryori, while his father, Chen Kenichi, became Japan’s “Szechwan Sage” and a celebrated Iron Chef. Inspired by their success, Chef Kentaro trained in Chengdu, China, mastering the region’s signature “ma la” flavors before leading Shisen Hanten to earn two Michelin stars in Singapore. Now, with Chen’s Kitchen, he brings a casual, accessible take on his family’s renowned cuisine.
Signature Dishes to Enjoy
At the heart of the menu is Mapo Tofu, featuring silky tofu, savoury minced meat, and spicy sauce infused with fermented bean paste and Szechwan peppercorns. Choose from four variations:
- Black: A5 Kagoshima Japanese Wagyu chuck rib.
- White: Prawns and scallops.
- Jade: Plant-based with green Szechwan peppercorns.
- Red: Classic minced pork with fermented broad bean paste.
Other highlights include XXL Szechwan La Zi Ji—crispy karaage chicken tossed with garlic chips, cashews, and dried chilies—and Poached Fish Fillet in Golden Broth with Japanese pumpkin and sansho pepper. For young diners, kid-friendly options like Kurobuta Tonkatsu and Yakiniku are available.
