Butchery Meets Brilliance: Who Is Chef Natt?

Chef Natt isn’t your average guest chef. She’s Thailand’s foremost beef ambassador, a sustainable meat evangelist, and a scholar with a PhD in red meat science. Her Bangkok restaurant, Lady Butcher, is a fine-dining altar to Australian beef – where zero-waste meets high art, and every sinew is savoured.

She wields a boning knife like a conductor’s baton, applying Stagionello ageing technology and the Cuomo Method to coax flavour, tenderness, and drama from every cut. And now, she’s bringing the whole act to EQ Kuala Lumpur.

Nipah Nights: The Buffet That Breaks the Rules

From 25 to 28 June 2025, head to Nipah for a buffet dinner that’s anything but ordinary. Priced at RM198 per adult and RM99 per child (6–12 years), this isn’t your typical hotel spread. The carving station alone could double as performance art.

  • Australian Beef Carpaccio with Jaew Dressing – razor-thin slivers, dancing with lime, chilli and toasted rice.

Sunday Brunch at Étoile: The Grand Finale

On 29 June 2025, Chef Natt takes over Étoile for a one-day-only semi-buffet brunch (RM158 per adult, RM79 per child). Think elevated brunch classics laced with her signature fusion finesse. Add a casual Parisian café vibe and you have the perfect Sunday reset – with beef.

Pair it with an icy lemongrass spritz, lean into the grilled ribeye with jaew sauce, and consider your weekend made.
