Chaleur

Chaleur earned its Michelin Star for a 10-course dinner menu fully expressing executive chef Masahiko Kawano’s culinary vision. After leading prestigious kitchens in Singapore, Japanese chef Kawano curated a menu juxtaposing French and Japanese ingredients. His attention to detail shone through in his duck consommé, painstakingly tweaked daily for consistency.

Matera

Matera, near many tourist attractions in Singapore, offers a dining concept by experienced German Chef Bjoern Alexander. His bold Asian influences pushed the boundaries of Italian cooking. Diners enjoyed watching the chefs work their magic in the open kitchen while taking in breathtaking views of Marina Bay Sands and the Esplanade. The signature whole red prawn featured the perfectly smoked, juicy crustacean with crispy prawn toast on the side to add contrasting textures.

Pangium

Pangium, offering a serene view of lush green gardens, took diners on a journey exploring the untapped potential of Straits cuisine. Singaporean Chef-owner Malcolm Lee’s exquisite tasting menu paid homage to family recipes passed down through generations. Named after the pangium plant, producing the buah keluak seed, a key ingredient in Peranakan cooking, Pangium’s carefully crafted dishes tasted exceptional.
